Dolby Digital 5.1 Encoding amp; Arranging Music

hello everyone!
I want to learn how I can arrange music for Dolby Digital 5.1 surround sound and also encode it (don't worry about the encoders, but the techniques.) I know someone who will be producing a Major Feature Film. Let's say I get the DATs from the Music Director and I have to take care of the rest-of having it Authored to DVD and also for Cinema Viewing (theatres). Arrange which sound comes out of which speaker, subwooofer, etc. And encode it to be authored on DVD. I want to learn the techniques and hot to exactly do it like the Pros.

....I can take care of syncronizing the audio to the video with the characters in the film.
